I always liked music, but never tried to learn an instrument and of course I'm a total jackass when it comes to music.
I own a VR headset and I play various music games amongst the others.
One is called "Virtuoso", you can see it here:

Basically it allows you to drag various fantasy instruments around you, play some music, record it as loops and build a song.
Actually it's a nice experience and keeps the tempo for you, so all is much easier.
Now to the question:
How one figures out how to put notes togheter?
I mean, I did some songs but they don't sound great.
How one should learn or understand or study how to make your music sound good? How to let the brain just "click" so you can put notes togheter?
For example:

This guy knows how to recreate that song and what notes to use and where to find them.
But even for a total new song, how you figure out how to put the notes togheter?
Basically i poke the instruments around until I find some notest that sound good and that's it. Nothing much more I can do.
I have totally no idea how to read or put togheter notes in a decent sounding way
