I've been studying the piano for a few years and have run into the issue that it doesn't tend to let each note have a particular quality, solely dynamics with how hard you hit the key. It gets around this by partially by having multiple notes which all work well together.
This issue in mind, what instrument would you say has the opposite effect? The one which an experienced player can make the same not have such drastically different qualities? The instruments that come to mind are trombone, cello, and saxophone but I'm sure there are plenty of others.
